- Cover with plastic wrap and refrigerate marinade for at least two hours.
- Fire up the grill.
- Thread chicken (five pieces) on skewers. Save the leftover marinade.
- Place skewers on grill and turn every couple of minutes while brushing leftover marinade on the chicken. Grill until chicken is cooked through.

Sweet and Spicy Shrimp Kabobs
Put some shrimp on the barbie! And make them sweet and spicy with this tasty recipe.
Ingredients
- 1/4 cup Sue Bee® honey
- 1 tbsp minced canned chipotle chile in adobo
- 2 garlic cloves
- 1/2 tsp kosher salt
- 1 lb large shrimp
- 2 tbsp minced fresh cilantro
Directions
- In a large bowl, combine the Sue Bee® honey, chile pepper, garlic and salt.
- Add the shrimp and toss to coat. Cover and marinate at room temperature for 20 minutes, or in the refrigerator for one hour.
- Remove shrimp from the marinade and discard any remaining marinade.
- Thread the shrimp through the tail and head onto small metal skewers or soaked wooden skewers (two or three per shrimp per skewer). Strong rosemary stems are good to use as skewers, too.
- Grill over direct, high heat for two to four minutes, turning once halfway through grilling time. Arrange skewers on a serving dish and sprinkle with cilantro.

Honey Veggie Kabobs
For this fresh and healthy grilled side dish, you’ll need zucchini, squash, mushrooms, red onion, cherry tomatoes and green bell peppers.

- 3/4 tsp dried oregano
- 1/8 tsp of ground black pepper
- Veggies: Try zucchini, squash, mushrooms, red onion, cherry tomatoes and green bell peppers
Directions
Slice the vegetables into one-inch slices, keep the mushrooms and cherry tomatoes whole and make chunks out of the red onion.
Mix the honey, olive oil, basil, oregano and ground black pepper and warm in a small saucepan while threading the vegetables on the skewers. Preheat the grill to medium heat, and lightly oil grate. Brush the honey-spiked marinade over the vegetable skewers and grill until lightly charred (10 to 15 minutes).
A Hive of Five
Meet Sioux Honey beekeeper Will Nissen of Minot, ND
Five Star Honey is truly a family business, named after Will Nissen, his wife Peggy, and their three boys – Matt, Levi and Evan – who are all actively involved in day-to-day operations. Every morning, the family meets for what Will calls the “board meeting,” where they map out their plans for the day.
Will is pleasantly surprised that all three of his boys have followed him into the honey business.
“I figured one of them would stick around, for sure. But when you send them off to college, and they get degrees, maybe they would want to step out in the big new world,” says Will. “But I think they can see that there’s a future in bees, and it’s a good, solid future.”
Will got his start in beekeeping through fate – being in the right place at the right time. His construction job had ended, and he was at the unemployment office when a beekeeper called in looking for a hand building a wall and other odd jobs.
“He said, ‘I’m looking for somebody to help me pull honey. I don’t know if you’re strong enough.’ You didn’t have to tell me twice. I’ve never been laid off since,” Will said.

Will spent several years learning the ins and outs of the bee business from his mentors.
“There’s a lot of ways to run bees, and a lot of ways to make it work” he says.
For example, beekeepers traditionally paint their hives white – it’s the classic look we’re all familiar with. Five Star’s hives, however, are a rainbow of colors, like a field of Easter eggs. That’s because Will saves money by buying mistinted paint at the local hardware store, using whatever color is available.
“I never met a bee that gave a darn what color the hive was,” he says, laughing.
Over the years, Will has developed a patient approach.
“The first thing you do when you open the lid on a beehive is just listen. Just look at the bees and listen. You can tell a lot by the sound, just the way the bees are moving,” he said.
“Some people can never work bees, because their temperament’s not right. You’ve got to be really relaxed, just smooth. You know, it’s just like a rhythm with them … I work for the bees, and the bees work for me.”
It’s clear, he respects his bees. “They’re just amazing insects. Even after 40-some years, I learn something new all the time.”

Will loves every aspect of his chosen career, despite the hard work and long hours.
“You gotta have fun,” he says. “If you don’t like what you’re doing, don’t do it. You start getting in the 12-, 16-hour days, it’ll wear you down. But you always know in the back of your head, it’s not forever. You’re going to just have to get through it.”
In a typical summer day, Will’s sons and their crew will drive 200 miles or more, visiting bee yards northwest and southeast from their base in Minot, ND.
Largely agricultural, the northern prairie is rich with the kinds of flowers that bees use to produce top-notch honey – alfalfa, sweet clover, canola, sunflowers and more. North Dakota’s warm days and cool nights are conducive for nectar production in these plants.
But come winter, the harsh northern climate is too much for the honeybees, and so the Nissens load their hives onto trucks for the 1,700-mile drive to California, where the bees go to work pollinating that state’s expansive almond orchards.
“The hardest part of the job is going to California for months at a time,” said Will’s son, Matt. “The family stays here in North Dakota, and we go with the bees. The physical work stuff is probably the easiest, but being away from home, that’s hard.”
But the family knows the end result is worth all of the effort.
“I like it when I see people in the grocery store who actually take a bottle of honey and hold it up just to look at it,” Will says. “I love to turn it upside down, just to see how fast the bubble goes. I’m just amazed at how many bees it took for that honey to get from the hive to that store shelf.”
Ask him about the Sioux Honey Association Co-op, and he’s unequivocal.
“The co-op is probably the best thing that happened to Five Star Honey Farms. We’re proud of our product, and what we put out. With Sioux, we trust where that honey’s going.”

100 Years of Beekeeping
Third-generation beekeeper Rob Buhmann carries on family tradition
Sioux Honey Association Co-op beekeeper members come from every corner of the United States – even a remote area in northern Montana.
Rob Buhmann, a third-generation beekeeper, lives “about 20 miles south as the crow flies from the Canadian border” in Zurich, Montana. Because he’s also the Chairman of the Board of Sioux Honey, he travels to the honey company’s Sioux City, Iowa, headquarters four times a year for meetings.
We caught up with Rob at a recent gathering of board members and, while we were there, Rob took us on a tour of the Sioux Honey bottling facility, which you can see in the video below.

A kid and his beehive smoker
Rob’s grandfather, Reinhart Buhmann, began beekeeping with his brothers, Lawrence and Clarence, in 1918. That’s 100 years of beekeeping for the Buhmanns, a tradition that Rob and his wife, Gloria – and their daughters and sons-in-law – are continuing today.
The Buhmann honey business started in Oregon, but moved to northern Montana in 1929. They shipped their hives by rail car and eventually settled in an area near Zurich, Montana, in 1937. The family has been running hives in that location ever since.
Rob was introduced to the family business early on; when he was 5, he said.
“I can remember I was with my dad and mom,” Rob recalled. “He was checking the bees and I got to get out with him and put on a veil and he handed me the smoker. As any beekeeper knows, when they hand a young kid – boy or girl – the smoker, we’re fascinated.
“I can vividly recall my father trying to get me to tone down a little bit on the smoker because I was loving working that smoker. That’s really one of my first recollections of actually going out to a bee yard.”
From there, Rob was hooked.
“It just became the natural thing that I wanted to do, and it’s what I continue to do. I enjoy the work and the challenge and everything that comes with it. I guess I never really considered doing anything else.
“And I’m honored to be able to be a third-generation beekeeper and to continue something that was started by my grandparents. It has given me the opportunity to work with them and my father, and then I had a brother that was involved in the business with me for a number of years. Now I have three daughters and sons-in-law, along with my wife, so I’m optimistic to be able to continue and pass it on.”

Growing the family business
When Rob’s grandfather moved the Buhmann honey operation to Montana, he brought with him about 150 colonies. Today, Rob has grown the business to about 3,500 colonies.
Rob runs his bees in northern Montana in the spring and summer and then takes them to California in January and February to help with the almond pollination.
Two of Rob’s daughters, and their husbands, work in the Buhmann family with Rob and his wife, Gloria.

Joining the Sioux Honey co-op
A lot has changed since 1921, the year a handful of inspired beekeepers united to create the Sioux Honey Association Co-op. But there is one thing that hasn’t changed – Sioux Honey is still a co-op, not a corporation, and the same original goal remains: Keeping the focus on what’s best for Sioux Honey’s customers, its beekeepers and its honey.
Rob’s grandfather and father joined Sioux Honey in 1947. There were a few years in the late 1960s and early 1970s when the Buhmanns weren’t members, but they rejoined in 1974 and have been delivering honey to Sioux Honey for the past 44 consecutive years.
“That’s the special aspect of this cooperative,” Rob said. “It’s more of a family, and we all have the same goal: To provide the best, most natural and pure honey available anywhere in the world.
“We truly care about the product we’re putting on the shelf.”

Have Bees, Will Travel
Sioux Honey® beekeeper is as busy as his bees
When you think of a “gypsy,” you might imagine someone dressed in boho chic clothing and traveling down the highway in a colorful wagon. Not someone wearing beekeeping gear and driving a flatbed truck full of beehives.
But “gypsy” is how many commercial beekeepers describe their often-nomadic lives.
“You kind of have to be half-gypsy to be in this business,” says second-generation beekeeper Ryan Thomas, whose Texas-based family members are longtime members of the Sioux Honey® Association Co-op. “It’s best to keep a bag packed, because it seems like you’re always on the move.”
Like a lot of Sioux Honey beekeepers, Ryan and his family move their honeybees from season to season. In the spring, their bees are feasting on tallow trees in the Liberty, Texas, area. By June, Ryan and his crew are on the road to North Dakota where bees forage on canola, clover and alfalfa through the August harvest season.
From North Dakota, they move on to Idaho where their bees rest in a storage area so they can build up strength before moving on to California to help pollinate almonds in January and February. Then it’s back to Texas to rebuild hives and start the spring honey production all over again.
It’s a lot of traveling, but being a beekeeper is all Ryan has ever wanted to do.
“I’ve been going to the bee yard ever since I was potty trained,” he says.

The joys of beekeeping
Ryan’s father, Don, and Don’s uncle began beekeeping in 1972 in Highmore, South Dakota. Eventually, they went their separate ways, and Don moved to Canada. He began a beekeeping operation on his own, before moving to Liberty, Texas, in 1995.
Ryan was just a toddler when he started going with his dad to the beeyard.
“I was his little helper, holding the smoker. That’s usually what the kids start with – the smoker. It’s the coolest thing. And that’s what we did every day. I’ve been in bee yards ever since.”
Traveling can be tough on the family. Ryan says he missed his fair share of high school football games, but his family often travels with him. And being able to provide a great life for his wife and children has made the time away worth every drop of sweet honey he has collected.
And now his son, Jared, is following Ryan into the honey business. Jared will be the third generation of the Thomas family to make beekeeping a career.
“That’s always been my dream to pass it along. You work all your life to build it up. Not to sell it, but to pass it onto the next generation. Hopefully he takes it and runs with it,” Ryan says.
So what makes being a beekeeper so special?
“Being outside all day – this is my office. I love being outside and seeing the hives progress and grow in the spring. Springtime is probably my favorite; everything’s growing and rebounding and the hope for the new year is there, you know?
“As a farmer, it’s always about next year and hoping for a big, plentiful crop.”

Joining the Sioux Honey co-op
Ryan and his father have been members of the Sioux Honey co-op for many years. For their family – which is among the top producers in the 200+ beekeeper cooperative – being a part of the co-op allows them to focus on what they love doing most. Ryan says, “That’s important for us so we can concentrate on keeping our hives healthy and robust, and producing honey.
“At the same time, we have a sense of ownership with the co-op. With Sioux Honey, you feel like you are a part of something. Part of a group that started almost 100 years ago. That’s what makes our honey so special.”
Always building hives
Ryan has several employees who help him keep his hives healthy and strong all year long. Like most commercial beekeepers, Ryan has had to rebuild his colonies each year. In the past 10 to 15 years, on average, most commercial beekeepers have been losing between 20% and 35% of their hives each season. The loss of forgeable land, the pesky varroa mite and extreme weather are some of the reasons colonies of bees are lost.

“There’s been a lot of changes over the years, a lot of the monocropping (when farmers grow a single crop year after year on the same land, without rotating other crops) and that has hurt,” Ryan says. “There’s just not the flowers there used to be in a lot of places. Farmers have gotten really good at taking care of weeds, and weeds are a beekeeper’s friend.”
And like most beekeepers, Ryan is concerned with the honeybee population continuing to be as strong as it has always been.
“Without bees to pollinate so many of our crops … that’s just not a position we want to be in,” he says.
Which makes landowners whose properties provide the wildflowers and foliage that honeybees need in order to forage all the more valuable.
“They are so important to us; they’re what makes our business,” Ryan says. “Without them, we don’t have a place to put our bees. We’re helping them, too, by pollinating their crops and enhancing their yields. But yeah, they are essential to us, and they are one of the beekeeper’s biggest assets. Most of the landowners we have, we’ve had for 20 years or more. We’re very lucky.”
The Great American Picnic
How to make a dazzling dining display for the 4th of July
America wouldn’t be America without the freedom to have a picnic. It’s in the Constitution, after all: “A well-regulated cookout, being necessary to the joy of the free State, the right of the people to keep and bear picnics, shall not be infringed.”
OK, so maybe that’s not in the Constitution, but it should be. What’s more red, white and blue than a picnic? That’s why the Fourth of July is one of the best days of the year to celebrate our friends and family by sharing a meal in the great outdoors.
The best part? You can show your patriotism and your support for the USA honeybee and beekeeper families by cooking up a delicious spread with recipes that all include a very important ingredient: Honey – Sue Bee® or Aunt Sue’s® Raw & Unfiltered, it’s your freedom of choice.

Bee Curious
Dear Sioux Honey: Can my dog eat honey? Is crystallized honey edible? How many honeybees are in the world?
Each month, we get all sorts of questions at Sioux Honey®, like:
How long do bees live?
Is honey kosher?
When can babies start eating honey?
What kinds of food do honeybees pollinate?
We love receiving these questions. And we really love answering them. When it comes to honeybees and honey – and the Sioux Honey® beekeeper families that collect it – the questions and fascinating answers are endless.

‘Good things come in small packages’
How small? Well, a single honeybee makes 1/12 of a teaspoon in its lifespan. That’s tiny! Picture an M&M. Now, bite it in half. OK, now bite that in half. That’s about the volume of honey that a bee produces – IN ITS WHOLE LIFE!
Think about how many honeybees it takes to make a single pound of Sue Bee® honey or Aunt Sue’s® Raw & Unfiltered Honey. Consider:
- The average worker honeybee (females) lives for about six weeks. The drones (males) live a few weeks. And the queen has a lifespan of two to three years, on average.
- It would take 12 honeybees 72 weeks (six weeks each) to make a single teaspoon of honey.
- There are 64 teaspoons in a pound of honey. That’s 768 honeybees working 4,608 weeks (six weeks each) to make a pound of honey.
- To put that into further perspective, consider that Sioux Honey’s 200+ family beekeepers collect about 40 million pounds of honey each year. That means 37.7 billion bees contribute to that total.
- By the way, how many flowers do the bees have to visit to collect nectar for that one pound of honey? About two million.

Honey … it’s kosher, right?
Yes, honey is considered kosher.
EarthKosher.com explains it this way: “Because the bee releases the honey from within, it isn’t produced by the bee’s body, making it kosher. (Unlike a non-kosher camel that produces non-kosher milk.) … While there are scriptures that prohibit one from eating a flying insect, there aren’t any verses that prohibit someone from eating what a flying insect excretes – i.e. honey.
“Once you really understand how bees turn that sweet nectar into honey, you actually find that the nectar is never digested. Honeybees simply transform nectar into honey. It is not a secretion of the bee, either. The lovely honeybee only acts as a carrier or facilitator of honey, as opposed to milk produced by a cow or eggs produced by a chicken. This scientific fact is what makes honey a kosher product.”

When is it safe for babies to eat honey?
Infants should not eat honey until they are one year old. Occasionally, honey can contain bacteria that produce toxins in a baby’s intestines, leading to infant botulism, which is a “rare but serious gastrointestinal condition caused by exposure to Clostridium botulinum spores,” says mayoclinic.com.
For this reason, it is recommended to wait until your child is more than one year old before you start letting them enjoy honey.

How about my dog? Can he eat honey?
Yes, says the American Kennel Club. “Honey is safe for dogs to eat in small quantities. It contains natural sugars and small amounts of vitamins and minerals and is used as a sweetener in many foods and beverages.”
However, like human infants, the American Kennel Club recommends that you not feed honey to puppies. “Raw honey should not be fed to puppies or dogs with compromised immune systems, as it may contain the presence of botulism spores. Honey should not be given to diabetic or obese dogs,” says akc.org.
By the way, if you’re looking for a delicious homemade treat for your four-legged friends, try one of our Sue Bee® recipes, like this one for our Peanut Butter Banana Honey Pet Treats.

More fun with honey numbers
As previously mentioned, we rely on bees to pollinate 71 of the 100 crops that provide 90% of the world’s food. In the U.S. alone, honeybees pollinate an estimated $15 billion worth of crops every year. They say that one in every three bites of food we eat depends on bee pollination.
Here are just a few foods that would disappear without the honeybee:
- Apples
- Almonds
- Blueberries
- Avocados
- Cucumbers
- Onions
- Oranges
- Pumpkins
- Grapefruit
- Cherries

How many honeybees are there?
In the U.S., there were about 2.81 million colonies of honeybees (kept by commercial beekeepers) producing honey in 2019, according to the USDA. (Also, according to the USDA, each of those colonies averaged 55.8 pounds of honey each.)
So, how many bees is that? Each colony (each hive) of bees contains between 20,000 and 60,000, so let’s take the middle number and say, 40,000. Multiply that by 2.8 million and you get about 112 billion honeybees.
Those figures are only for the United States, by the way. And that’s only commercial honeybees producing the honey we eat. It doesn’t take into account the feral honeybees in the U.S.
According to the United Nations Food and Agriculture Organization’s website, there were 92 million commercial/domesticated beehives in 2018. So that’s 3.6 trillion honeybees!
Wait, there’s more! The estimates for wild/feral honeybees in the world are a wide range – from 400 million to 800 million. If we take the middle ground again and go with 600 million, and with an average of 40,000 honeybees per hive, that’s 24 trillion honeybees. (Our calculator just exploded.)

Is crystallized honey safe?
Yes. Some people even prefer crystallized honey. They say it’s easier to spread on bagels and toast.
Honey doesn’t have a shelf life. In fact, according to National Geographic, archaeologists found pots of crystallized honey in ancient tombs that date back 3,000 years. It’s the world’s oldest sample, and still perfectly edible.
So, how does honey crystallize? And why? Check out our blog that tells you everything you ever wanted to know about crystallized honey.

The Honeybee Waggle
Figure-8 dance leads worker bees to nectar sources
Birds chirp, dogs bark, frogs croak, fish grunt and click. Each animal has its own unique way of communicating. Honeybees do, too. It’s called the “waggle.”
Worker bees travel up to two miles from their hives in search of nectar sources like clover, wildflowers, fruits, etc. When a honeybee discovers an abundant source of nectar, it hustles back to the hive to tell the thousands of other honey-makers where to find it. By dancing.
With a few simple moves, the honeybee can relay the direction of the nectar source, how bountiful it is and how far the bees need to travel to get to it. Once she gets the attention of her hive mates – by letting them sample the pollen and nectar she gathered at the source – the dance begins.

Shake your honey-maker
If the nectar source is close – within 300 feet of the hive – the worker bee will perform a round waggle dance. It’s a simple routine in which she circles two to three times while her audience watches. The message is simple: Food is nearby.
Once that message is delivered, worker bees set out to find it themselves. They know it’s close and they know the scent and taste, having sampled it from their dancing colleague.
If the nectar source is farther from the hive, the honeybee will perform a more elaborate figure-eight waggle dance. This routine – more of a skillful tango versus a simple two-step – gives a more exact location, with the direction and duration of the waggle correlating with the direction and distance from the hive.
The honey-making dancer waggles in semi-circles, shaking her “booty” (her abdomen) in the direction of the food source. The angle of the dance also informs her onlookers where the food is, relative to the sun. The longer she shakes her body in the general direction, the longer the trek will be.

Mayor of the Bees
From city hall to California and North Dakota beeyards – this beekeeper has experienced it all
He double-majored in political science and economics at the University of California, Berkeley. After graduation, he took a job in San Francisco in international trade.
But the family business – and public service – was calling him back to his hometown of Hughson, California. And when that family business is beekeeping, and your last name is “Beekman,” fate tends to play a significant role.
Besides, as any “beek” (bee geek) will tell you, once honey is in your blood, you’re a beekeeper for life. That’s certainly been the case for Matt Beekman, a third-generation beekeeper and proud member of the Sioux Honey Association Co-op.

That first taste of sweet honey
Matt’s grandfather began keeping bees in the early 1930s. Like many beekeepers, it all began with finding a swarm. From there, Grandpa Beekman and his brother ran bees all over central California – from the valley to the coast.
“Honey prices were pretty good,” says Matt. “We were coming off of the Depression, so the economic opportunities weren’t that great. My grandfather saw a window and he went for it.
“When I was young, I helped my dad and grandfather. I grew up on it,” Matt says. “I was like a lot of beekeepers – and like my grandfather – who had this inherent curiosity. ‘What makes these things work?’ ‘How do these bees do what they do?’ And what’s crazy about beekeeping is I’m a third generation and they still haven’t figured it out. It’s an endless question.”
An alternate path to the beeyard
While Matt’s father continued the family bee business back in the Hughson area, Matt headed off to college to study economics and political science.
“International trade, shipping – that interested me. So I took a job in San Francisco after graduation,” says Matt. “But even when I was working in San Francisco, I would still come home a lot on weekends. I always liked it, and when it came time to start having a family and thinking long-term, I started giving serious consideration to getting back into the business.”
Matt eventually moved back to Hughson where he was soon appointed to the City of Hughson Planning Commission. After five years on the planning commission, he was elected to the city council, then mayor – all while running a beekeeping business.
“I didn’t want to be a professional politician; I was never interested in that,” he says. “But I just wanted to get involved because the town needed help with its long-term development plans and financial organization. I helped weed out some of the corruption and helped get the city back to where it was very successful.
“We had the lowest crime rate, the highest level of financial reserves, and our roads were in the best shape of any city in our county. Hughson is a model city now. People really look to us. You know, it’s a small city, but it’s governed and run very effectively.”

No desks, please
As rewarding as his public service life was, Matt nevertheless gravitated more and more back to beekeeping and the freedom it brings.
“When I was in San Francisco, I had an epiphany of sorts. One day I was like, ‘If everything goes just right, I could be here for another four years, staring at the same window.’ It was kind of a scary thought for me,” Matt recalls.
“Beekeeping, you’re out and about all the time. That part I really like. It’s a very dynamic job. Things are always changing. We’re moving bees to different areas all year. And we’re doing different functions – sometimes we’re doing pollination, sometimes we’re doing honey production. Raising queens – it’s always evolving.”
In the summer months, Matt takes his 4,000 hives (that’s about 180 million bees) to north-central North Dakota where they forage on the region’s abundant wild clover, canola and sunflowers.
In the fall, Matt brings his bees back to California to prepare for spring when he rents out his bees to help pollinate the state’s annual almond crop, which produces about $11 billion in almonds each year.
One almond farmer that Matt partners with on pollination is his father, Bruce, who has continued to farm almonds after selling the family’s honey business to Matt a number of years ago.
“Beekeepers never retire. They have to do something,” Matt says with a smile.
After the almond pollination in January and February, Matt takes his bees to California’s Central Coast and the foothills. Much of the honey the bees make at this point is for the bees to eat, so they can build up strength in preparation for the heavy summer honey production in North Dakota.
Matt also harvests some of the honey that his bees make in California, which offers a wide variety of floral sources. From oranges and black button sage to avocados and manzanitas in the Sierra Nevada, there are plenty of forage sources for honeybees in California.

A trustworthy co-op with a rich history
Matt is the first member of his immediate family to join the Sioux Honey Association Co-op. His cousin, Bryan Beekman, has been a member of the nearly 100-year-old co-op since 2003.
“Reputation was a big reason I joined Sioux Honey,” Matt says. “It’s been almost a hundred years since they formed the co-op, and that consistency is something I was looking for.”
Selling your honey on the open market can be a crapshoot. And once the honey leaves a beekeeper, there’s no telling where it goes or what happens to it when it’s sold on the open market.
With Sioux Honey, Matt said he knows it’s U.S. Grade A, pure honey. After working in international commerce, identifying his honey as a product of the U.S.A. is a big deal for him.
“My cousin Bryan is also a member, so I talked to him about it, too,” Matt says. “I’ve been able to produce a product and been able to ship it in a relatively short time after it’s made, and we have a consistent revenue stream. Just from a planning perspective, it’s a big advantage – a big reason why we joined Sioux Honey.”
Matt’s been learning as much as he can about Sioux Honey, and he looks forward to taking on more responsibilities within the co-op.
“Definitely, as time goes on, I’d like to play a larger role and offer some input and things like that. Being a beekeeper, to me, I honestly think that honey is probably one of the most magical agricultural commodities that you can find. If you just look at all the aspects of food – texture, aromatic, sweet – honey really possesses a lot of these things. And for us, as a co-op, to be able to get this product to the consumer is an awesome opportunity.
“Every beekeeper who drains his or her holding tank and then barrels it, smells it and tastes it knows what it can be. That’s what we get to the consumer.”

The amazing qualities of honey
Adding honey to his coffee is Matt’s favorite way to enjoy nature’s sweetener. He also is an avid cook. When he’s in the kitchen, he always has a bottle of honey nearby. But honey is much more than a natural sweetener for coffee and an important ingredient in baking. Honey is magical in so many different ways, Matt says.
“If you really look at honey from a global perspective, a lot of areas in the world look to honey as a medicine,” he says. “They look to a beehive as a medicine chest. I spent a summer in Russia when I was in college and the host I was staying with was having a little bit of a lung infection and her doctor prescribed her propolis. That was the prescription, and she would consume small amounts of propolis.”
(Propolis, or bee glue, is a mixture that honeybees make by mixing their saliva and beeswax with botanical sources they collect from tree buds and sap flow. It’s used as a sealant for small spaces in a hive – as opposed to beeswax, which is used for larger spaces, like capping honey cells.)
“We’re still learning. You look at bees in general – the only limitation is our imagination. It’s really up us to keep learning and to be diligent in our care of the bees.”
