Honey Espresso Crème Brûlée

Ingredients

4 large egg yolks, beaten

2 1/4 cups heavy whipping cream or whole milk

1  1/3 cup Sue Bee® Clover Honey

1/3 cup cornstarch

½ tsp salt

2 tsp real vanilla extract

¼ tsp baking soda

Course flake sea salt to finish


Directions

Preheat oven to 350 degrees.

Combine cream or milk, honey, cornstarch, salt, and baking soda in a medium saucepan. Bring to a boil over medium heat, whisking constantly.

Once the mixture comes to a boil and begins to thicken enough to coat the back of a spoon, remove from the heat.

Temper hot mixture into beaten egg yolks a few tablespoons at a time, whisking constantly to avoid scrambling the egg yolks. After about half the hot mixture has been added, pour in the rest all at once.

Add vanilla extract and stir to combine. (Strain if an exceptional smooth texture is desired)

Add 1-2 tbsp espresso or coffee, pour into small custard cups and bake at 350 for 15-20 minutes, or till well set.

Remove from oven, top with sugar, and finish under broiler on high, watching carefully not to burn the sugar.

Sprinkle with course flake sea salt and allow to cool to room temperature.

Quick Sandwich Kabobs

Ingredients

2 tbsp Sue Bee® Honey Mustard

2 slices good, crusty sandwich bread

½ cup cherry tomatoes

1 cup romaine lettuce, torn into bite-sized pieces

1 cup deli turkey, torn into bite-sized pieces

1 cup deli muenster or cheddar cheese, torn into bite-sized pieces

salt to taste


Directions

Toast bread lightly and tear into bite-sized pieces.

Spread one side with Sue Bee® Honey Mustard.

Skewer the bread, turkey, cheese, lettuce and tomatoes, alternating.

Team Sweet Takes on the Heat!

The mobile beehive was on the move yet again last weekend! We didn’t let the heat keep us from buzzing around to share sweet moments with our friends in Phoenix.

With it being the peak of summer, it’s not uncommon for Arizona to see triple-digit temperatures! We knew there had to be a way that we could #sharesweetness that would bring a little relief… So our worker bees set out on a flight path to help people stay cool and hydrated.

Our first stop was at the Phoenix Rescue Mission. The Mission was founded in 1952 and has been helping countless persons in need ever since. It was important to us to do our part to contribute when we heard that they were in a “code red” due to the sweltering temps. The people of Phoenix donated thousands of bottles of water, and the Sioux Honey Association Co-Op was happy to have played a small part in that.

Our worker bees didn’t stop there – more people needed our help! So they hit the trails to share some sweet heat relief with the honeys brave enough to take on the desert.

Because a spoonful of honey makes a great energy booster, what better way to fuel up on a hike than with our Sue Bee® honey packets? (#ShareSweetness team approved!)

Honey isn’t only good for helping replenish your body’s energy – it’s great for helping soothe sunburns, too! So our team then buzzed over to the Anthem Community Center.

The lifeguards on duty work very hard to keep our kiddos (and adults) safe while they try to cool down in the pool. We hope our sweet treats gave them a boost!

Honey-Sweetened Blueberry Jam

Ingredients

1 qt blueberries (1 1/2 pounds)*
2/3 cup Sue Bee® Clover Honey
1/2 lemon, juiced

*You can use other fruits, but blueberries have a good deal of natural pectin, so you may need to cook other fruits longer in order to achieve a thick consistency.


Directions

Use a low, wide, non-reactive pan such as stainless steel – mash blueberries.

Add the honey and lemon juice and stir to combine. Let the mixture sit until the honey begins to dissolve and the mixture stirs easily.

Bring to a boil. Then reduce heat and cook, stirring regularly, for 10 to 12 minutes, until the jam starts to thicken.

Pour in containers, let it cool and refrigerate.

Or to make the jam shelf stable, pour it into clean, hot jars. Apply lids and rings and process in a boiling water bath canner for ten minutes.

 

The Sweet Scenic Route

The #ShareSweetness team made it through launch week in Colorado! We made so many new friends and took in the fresh Rocky Mountain air from Longmont all the way down to Colorado Springs. Soon enough, though, the sun set on our week there, and it was time to turn up the heat and head South to the desert! Or so we thought …

We hopped in our mobile bee hive and buzzed out of the Springs expecting to wave goodbye to all things green and colorful and say hello to a different kind of beauty. Much to our surprise, before we hit dirt, we entered another playground full of spectacular mountainous scenery … NEW MEXICO.

Upon entering New Mexico, there are signs boasting that it is the “Land of Enchantment.” It only took us a few miles of driving the Enchanted Circle Scenic Byway to know why!

As we made our way into Arizona, there was one thing we found to be true: Everyone seems to love honey. Or at least everyone we’ve met!

We had so much fun getting to #sharesweetness with locals along the way – from Surasit, a nature photographer with a keen eye for bees, to the New Mexico River Adventures white water rafting crew, and our super friendly wait staff at the Cowboy Club Grille in Sedona.

Mike and David of the Sedona Fire Department were in the middle of making dinner at their station when we arrived. They let us check out their sweet ride, so we stocked them up with spun honey for dessert.

The Sedona sunsets were almost “un-BEE-lievable”!

It became easier to believe just how far south we had come since the start of our trip. The sunbaked red rocks and prickly plant life welcomed us with a hot and dry hello.

While we took our sweet time traveling, we finally made it to Phoenix. Truth “bee” told, we’re ready to see what this city in the desert is all about!

The #ShareSweetness team spent the weekend at the ballpark!

The rain kept the Sky Sox from playing on Saturday night, but the stadium was still abuzz with fans eager to stop by our table to hear about our co-op and try our honey. And to write a sweet note to incoming freshman at the Air Force Academy.

Despite the rain, it was Used Car Giveaway Night, a popular event for the team, so we wanted to sweeten the deal. We awarded $25 gas cards to the first three winners and #ShareSweetness goodie bags for all.


On Sunday, the sweet sunshine made its debut, so we were able to see some baseball! Our team got to hang out on the field with Sox the Fox.

Sioux Honey’s sweetie Emily even got to throw the first pitch.

Our crew handed out samples and helped keep fans hydrated with our Sue Bee® Sweet Tea.

Thanks for the home-run weekend, Colorado! We’re up to bat in Arizona next, so stay tuned to see our next play!

Sioux Honey Creates a Buzz By Launching ‘Share a Little Sweetness’ Tour

Longmont Event to Kick off 20-city, Seven State Tour

July 10, 2017 – The Sioux Honey Association Co-op, which includes several honey brands and products from American beekeepers, will launch its “Share a Little Sweetness” tour July 10, 2017 at 5 p.m. at Prospect Sound Bites at Prospect Park in Longmont.

The tour, a first of its kind for the nearly 100-year-old co-op, will visit 20 cities in seven states over the next 60 days. The purpose of the tour is two-fold: To provide free, U.S. Grade A honey, food-pairing samples and recipe ideas to consumers; and secondly, to give back to communities through acts of kindness with encouragement for others to do the same.

The tour is built around a 20-foot sampling truck and tent, featuring recipes with several different honey products, including Aunt Sue’s Raw Unfiltered Honey and Sue Bee Clover Honey, in a variety of food pairings. There also will be a photo booth and other activities available.

In addition to the stop at Prospect Park, the crew will deliver messages bearing good wishes and stuffed teddy bears to children at Children’s Hospital Colorado in Aurora, Colorado.

“Sioux Honey Association Cooperative’s passion and work to create pure, honest, USA honey has not changed,” said Lisa Hansel, vice president of sales and marketing for Sioux Honey Association.

“As we prepare to celebrate our 100th anniversary, this tour is a new, innovative way to share our beekeepers’ products and the relevance in today’s diet of what is likely the most perfect food known to man.”

The tour will make multiple stops in Colorado, Arizona, California, Oregon, Washington, Idaho and will conclude in Sioux City, Iowa, where the co-op’s headquarters are located.

Honey Tips For Summer

Summer is officially here and the honeybees are buzzing! As you prepare for long days at the swimming pool or trips to the lake, don’t forget to pack some honey, as it might prove to be quite helpful. Here are some of our favorite honey summer tips:

Sunburns 

Applying Sue Bee® honey directly on sunburned skin can help cool and soothe the burn. And you can go one step further by mixing together 1 teaspoon of Sue Bee® honey, 1 teaspoon of vegetable oil and 1/4 teaspoon of lemon juice and put it on the sunburned area. Leave it on for 10 minutes, then rinse off with water.

Bug Bites

Next time you get a bug bite, try rubbing Sue Bee® honey on it and pressing an ice cube on the honey.

Summer-Damaged Hair

Swimming and sunshine can be tough on hair. Help keep yours healthier this summer with a homemade hair shine. Stir 1 teaspoon of Sue Bee® honey into 4 cups of warm water. Add lemon if desired. After shampooing, pour the mixture through your hair. Don’t rinse. Dry as usual.

Sugar Substitute

Honey is Mother Nature’s sweetener and a great alternative to processed sugar. Take it on your trip to add to your coffee, tea, breakfast, lunch, dinner and more!

Honey Egg Hair Mask

Hair feeling frizzy and dry? Try our homemade honey mask. It’s easy to make, and it includes our natural AUNT SUE’S® Raw & Unfiltered Honey.

What you will need to make this is 1 tablespoon of Aunt Sue’s® Raw & Unfiltered Honey, 1 egg and 2 tablespoons of mayonnaise.

First, whisk the egg in a small bowl until it becomes frothy. Then, mix in the honey and mayonnaise until all ingredients are evenly combined. Apply the mask to wet hair and let it sit for 15 minutes. Rinse your hair first with water, then lather with shampoo and rinse again.

Salted Honey Caramel Popcorn

Ingredients

5 quarts popped popcorn

1/2 cup butter

1/2 cup brown sugar

1/2 cup Sue Bee® Clover Honey

1/2 tsp baking soda

1 tsp vanilla

Pinch of sea salt or cyprus flake salt


Directions

Heat over to 250 degrees.

Place pre-popped popcorn in large roaster or large bowls.

In a medium saucepan, melt the butter and add brown sugar and honey, stirring well.

Bring to a gentle boil and then lower temperature to simmer and cook/stir for about 5 minutes.

Remove from the heat and stir in the baking soda and vanilla. It will foam up a bit, but that’s OK, just stir it back down.

Working quickly, immediately pour over popped popcorn and stir well to coat popcorn evenly.

Spread on cookie sheets or parchment paper and place in oven.

Cook for 30 minutes, stirring every 10 minutes to evenly bake.

Remove from oven and sprinkle with sea salt or cyprus flake salt.

Let cool and enjoy!

Brussels Sprouts Salad with Honey Vinaigrette

Ingredients

½ pound Brussels sprouts

½ cup walnuts (optional)

1 package sliced pancetta

1 tbsp apple cider vinegar

3 tbsp extra virgin olive oil

1 ½ tbsp Sue Bee® Clover Honey

½ cup dried cranberries

Salt and pepper to taste


Directions

Optional: Toast the walnuts in a pan over medium high heat until fragrant, about 2-4 minutes. Set aside to cool.

Trim the Brussels sprouts, remove and discard outer leaves, and finely shred (or use a bag of pre-shredded Brussels sprouts).

Whisk together honey and cider vinegar with a pinch of salt and black pepper in a small bowl. Slowly drizzle in the olive oil in a continuous stream while whisking to mix.

Combine sprouts, Pancetta, walnuts (optional), and cranberries in a serving bowl. Toss with about half of the dressing. Taste the Brussels sprouts and add more dressing if needed.

Peanut Butter Banana Honey Biscuits

Ingredients

1 egg

1/3 cup peanut butter

1/2 cup mashed banana

1 tbsp Sue Bee® Clover Honey

1 cup whole wheat flour

½ cup wheat germ

1 egg white, lightly beaten, for brushing


Directions

Preheat oven to 300° F (150° C). Lightly grease a baking sheet.

Stir the egg, peanut butter, banana and honey together in a mixing bowl and blend them well.

Next, stir in the flour and wheat germ and mix thoroughly.

Place the dough on a floured board and roll to a quarter-inch thick. Cut into desired shapes with a cookie cutter (you can find all sorts of fun doggy-themed cutters online) and place on a baking sheet. Brush tops with egg white.

Bake for 30 minutes or until dried and golden brown.

Remove from oven and cool on a wire rack.

Make Sidewalk Paint in Used Honey Bottles

Ah, summer is finally here. School is out and it’s time to have some fun in the sun. With the weather warming up, it’s important to get the kids off the couch and outside playing. The best way to keep children cool while being entertained is sidewalk chalk, where they can sit and let their creativity flow.

Instead of purchasing sidewalk chalk, why not make your own sidewalk paint using your leftover Sue Bee® honey bottles? Recycle your old honey bottles and turn them into something new, unique and fun for the whole family.

Things you’ll need:

  • 1 part corn starch
  • 1 part water
  • Food coloring
  • Empty Sue Bee® honey bottles
  • Paint brushes
  • Name tags (optional)

Steps:

  1. Remove the labels and thoroughly clean the Sue Bee® honey bottles.
  2. In each bottle, mix in the corn starch, water and food coloring of your children’s choice.
  3. Replace the lids on the bottles and shake for 15 to 20 seconds.
  4. Dip paint brushes into bottles and you’re good to go!

With just a few simple ingredients and a couple easy steps, you can make the creation of sidewalk paint a family activity. Have the kids pick out which colors they want and let them shake, shake, shake the ingredients up.

Get creative with the food coloring by mixing the red and yellow dye to make orange or mix blue and red to make purple. The more colors, the more possibilities for your children to create.

Make sure you don’t forget to keep the lids to the bottles to be able to reuse the paint all summer. The next time you are ready to use it, just give the bottle another shake to remix all the ingredients.

Honey-Lime Fruit and Quinoa Salad

Ingredients

Honey-Lime Dressing

1/4 cup Sue Bee® Clover Honey

1 tsp lime zest

1/3 cup fresh lime juice

2 tsp extra virgin olive oil

1/4 tsp kosher salt

Fruit and Quinoa Salad

1 cup tri-color quinoa, cooked according to package instructions

1 plum, diced

2 nectarines, diced

1 peach, diced

1 apricot, diced

2 tbsp fresh basil, chopped


Directions

Cook the quinoa according to package instructions and let it cool completely.

Dice all of the fruit, chop the basil and mix it all gently into the cooled quinoa.

In a small bowl, whisk together the honey-lime dressing ingredients.

Pour the dressing over the salad and toss everything together.

Cover and refrigerate the salad until ready to serve.

Enjoy!
