Maple Honey Corn Muffins

Kristen Heigl’s Maple Honey Corn Muffins entry in the Sue Bee® honey Sweet Eats Recipe Contest!

Ingredients

  • 1/4 cup Sue Bee® Honey
  • 1/2 cup sugar
  • 2 eggs 3/4 cup heavy cream
  • 1 tsp maple syrup
  • 1/4 cup plain Greek yogurt
  • 1/4 cup butter, melted
  • 1 cup cornmeal
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1 tbsp baking powder
  • 1 tsp salt

Directions

  • Preheat oven to 400 degrees.
  • Mix together the Sue Bee® honey, sugar, eggs, milk, maple syrup, Greek yogurt and butter. Mix well.
  • Add the cornmeal, flour, baking soda, baking powder and salt. Mix until well combined.
  • Pour batter into greased muffin tin or muffin liners. Fill until 3/4 full.
  • Bake 12-14 minutes.
