Zucchini Oatmeal Cookies

 

Ingredients

  • 3/4 cup Sue Bee® Honey
  • 1/2 cup shortening
  • 1 cup oatmeal
  • 1 cup grated zucchini
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 cup flour
  • 1 cup whole wheat flour
  • 1 egg
  • 1 cup raisins

Directions

  • Preheat the oven to 375 F.
  • Cream together the shortening and Sue Bee® honey.
  • Add the egg; beat well.
  • Stir together flour, baking soda, cinnamon, nutmeg and salt.
  • Add this mixture alternately with the zucchini to the egg mixture.
  • Stir in the oatmeal and raisins.
  • Drop by teaspoons onto greased cookie sheets.
  • Bake for 10 to 12 minutes.
