Zucchini Oatmeal Cookies
Ingredients
- 3/4 cup Sue Bee® Honey
- 1/2 cup shortening
- 1 cup oatmeal
- 1 cup grated zucchini
- 1/4 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1 cup flour
- 1 cup whole wheat flour
- 1 egg
- 1 cup raisins
Directions
- Preheat the oven to 375 F.
- Cream together the shortening and Sue Bee® honey.
- Add the egg; beat well.
- Stir together flour, baking soda, cinnamon, nutmeg and salt.
- Add this mixture alternately with the zucchini to the egg mixture.
- Stir in the oatmeal and raisins.
- Drop by teaspoons onto greased cookie sheets.
- Bake for 10 to 12 minutes.
