Candied Yams with Pineapple

This yam casserole with pineapple bits and a sweet topping made with pecans is a great holiday side dish.

Ingredients

  • 1/2 cup Sue Bee® Honey
  • 1 can yams
  • 1 cup pecans (chopped)
  • 1 can pineapple bits
  • 1/4 cup brown sugar
  • 2 teaspoons nutmeg
  • 2 teaspoons ginger
  • 2 teaspoons cinnamon
  • 1/2 cup butter (softened)

Directions

  • Mash yams in large bowl.
  • Mix together butter, cinnamon, ginger, nutmeg, brown sugar and Sue Bee® honey and combine into yams.
  • Drain pineapple bits and add to mixture along with 3/4 cup of pecans.
  • Spread mixture into greased 2-qt. baking dish and sprinkle with remaining pecan bits.
  • Bake uncovered at 325 F for 20 to 25 minutes until heated through and bubbly.
