Heartland Honey Granola

 

Ingredients

  • 1/3 cup Sue Bee® Honey
  • 3 cups quick cook oatmeal
  • 1/4 cup wheat germ
  • 1/2 cup roasted peanuts, chopped
  • 1/4 cup walnuts, chopped
  • 1/3 cup light brown sugar
  • 1/4 cup canola oil
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla flavoring

Directions

  • Preheat oven to 250 F.
  • Lightly coat a baking sheet with cooking spray.
  • In a large mixing bowl, combine oatmeal, wheat germ, peanuts and walnuts. Set aside.
  • In a medium bowl, combine Sue Bee® Honey, brown sugar, oil, water, salt and vanilla. Stir well.
  • Pour the honey mixture into the oatmeal mixture and blend well until dry ingredients are coated.
  • Spread ingredients out on prepared baking sheet.
  • Bake for 1 hour, stirring every 15 minutes. Remove from oven cool before serving.

Gingered Carrots with Honey


Ingredients

  • 1/3 cup Sue Bee® Honey
  • 1 pound carrots
  • 1/3 cup butter
  • 1 pinch ground ginger
  • 1 tablespoon
  • fresh lemon juice

Directions

  • Bring pot of water to a boil.
  • Add carrots to boiling water and cook 5-7 minutes, until fork tender but still firm.
  • Drain the carrots and set aside.
  • In a large skillet over low heat, melt the butter and add Sue Bee® Honey.
  • Once honey and butter are melted and combined, add the ginger and lemon juice.
  • Stir the carrots into the honey ginger mixture and simmer until heated through. Serve.

Quick & Easy Honey Banana Bread

Ingredients

3/4 cup Aunt Sue’s® Honey

1 stick butter, melted

2 eggs

1 cup bananas, mashed

2 cups flour

1 tsp soda

Dash of salt

1/2 to 3/4 cups nuts, chopped

Powdered sugar, optional


Directions

Preheat oven to 350° F.

Grease and flour 2 small bread pans.

Mix ingredients together; pour into pans.

Bake for 30 minutes.

Let stand until cool. Remove from pans and dust with powdered sugar if desired.

Chunky Chocolate Bars

Ingredients

  • 1/2 cup Sue Bee® Honey
  • 21 1/2 ounce package fudge brownie mix (plus ingredients to make mix)
  • 1/4 cup creamy peanut butter
  • 3/4 cup chopped salted peanuts
  • 6 ounce package semi-sweet chocolate chips

Directions

  • Preheat oven to 350 F.
  • Prepare and bake brownie mix as directed on package, using cake-like directions.
  • Meanwhile, combine Sue Bee® honey and peanut butter in small saucepan and heat over low heat, stirring constantly.
  • Keep warm.
  • Immediately after removing brownies from oven, sprinkle with peanuts and chocolate chips.
  • Drizzle with warm honey/peanut butter mixture.
  • Cool completely before cutting.

Sue Bee® Honey and Cream Cheese Chocolate Truffles

Ingredients

  • 1/2 cup Sue Bee® Honey
  • 8 ounces cream cheese, softened, at room temperature
  • 8 ounces semisweet chocolate chips
  • Cocoa powder, for dusting
  • 12- or 14-ounce package of chocolate-flavored candy coating

Directions

  • Using a microwave-safe bowl, heat Sue Bee® honey and chocolate chips in a microwave oven for 35 to 40 seconds and stir. If chips are not thoroughly melted, warm for additional 10-second intervals, being careful not to burn the mixture.
  • Add the softened cream cheese to the mixture and stir until well-blended. Scrape any residue from sides back into the bowl. Cover with plastic wrap. Chill for 3 to 4 hours.
  • Dust your palms with cocoa powder (to prevent the chilled mixture from sticking to your hands) and form the chilled mixture into balls with a diameter of 3/4 to 1 inch. Place truffles on a cookie sheet lined with wax paper or nonstick foil and refrigerate another 30 minutes.
  • While truffles are chilling, prepare the chocolate-flavored candy coating according to package directions.
  • Using a wooden skewer or small relish fork, dip chilled truffles one at a time into chocolate-flavored candy coating. Let excess coating run off truffle, then place each piece back on the lined cookie sheet.
  • If desired, decorate truffles with sprinkles, chopped nuts or coconut, or drizzle with melted chocolate in a contrasting color or flavor. Place truffles back in the refrigerator for 15 minutes to set dipping chocolate.
  • Serve at room temperature.

Sue Bee® Honey Mustard Sauce


Ingredients

  • 3/4 cup Sue Bee® Honey
  • 1 3/4 cup mayonnaise
  • 3/4 cup brown or Dijon-style mustard

Directions

  • Blend Sue Bee® honey, mayonnaise and mustard in a medium-sized bowl. Chill.
  • Serve with vegetables or use on sandwiches or in recipes calling for honey mustard sauce.

Honey Irish Coffee

Ingredients

  • 2 tsp Aunt Sue’s® honey
  • 1 oz Irish whiskey
  • 6 oz hot brewed coffee
  • Whipping cream

Directions

  • Pour whiskey into a mug.
  • Add Aunt Sue’s® honey and coffee; stir to combine.
  • Pour several spoonfuls of whipping cream over the top of the coffee. Do not stir.
  • Serve immediately.

Sue Bee® Honey Whipped Cream

Ingredients

  • 5 tablespoons Sue Bee® honey
  • 1 1/2 cups cold heavy cream

Directions

  • Whip the heavy cream in a large chilled mixing bowl using a wire whisk attachment until it begins to thicken.
  • Add the Sue Bee® honey and continue to whip until it holds soft peaks.
  • Serve immediately.

Sue Bee® Honey Pecan Pie


Ingredients

  • 1/2 cup Sue Bee® Honey
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 3 eggs, beaten
  • 1 cup pecans
  • 1 9-inch single pie crust

Directions

  • Blend Sue Bee® honey and brown sugar in a saucepan and cook slowly over medium heat, stirring until it becomes a smooth syrup.
  • Remove from heat and stir in butter.
  • Mix in beaten eggs and pecans.
  • Pour into pie shell then bake at 400 F for 10 minutes.
  • Reduce temperature to 350 F and bake for 30 minutes, or until inserted knife comes out clean.

Honey-Glazed Turkey

Ingredients

  • 1/2 cup Sue Bee® Honey
  • 15 pound turkey
  • 1/2 cup dijon mustard
  • 1 teaspoon dried rosemary
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder

Directions

  • Tie the turkey’s drumsticks together and tuck the wings underneath. Place turkey in roasting pan breast side up and bake at 325 F for two hours.
  • Mix Sue Bee® honey, dijon mustard, dried rosemary, onion powder, salt, pepper and garlic powder in a bowl and brush over turkey after first two hours of baking. Return to oven and continue to baste turkey with pan drippings until thermometer reads 180 F about two hours.
  • Remove turkey and cover with tin foil for up to 15 minutes before carving. Serve with stuffing and gravy.

Sue Bee Scary Good Popcorn


Ingredients

Popcorn

  • 1 teaspoon salt
  • 1 tablespoon olive oil/vegetable oil
  • 1/3 cup unpopped popcorn (multi-colored kernels recommended)

Honey Coating

  • 1/2 cup Sue Bee® Honey
  • 1 teaspoon pure vanilla extract
  • 1/4 cup whipping cream
  • 1 tablespoon butter

Directions

  • Mix together the popcorn, salt and oil until all kernels are coated. Place kernels in a paper lunch-size sack and microwave on high for 1 minute 30 seconds.
  • Preheat oven to 300 F. To make coating, combine Sue Bee® honey, vanilla extract, whipping cream and butter in a small saucepan. Using a candy thermometer, heat popcorn mixture on stove to 240 F, then pour it over the popcorn and blend to coat thoroughly. Be careful, because mixture is very hot.
  • Spread coated popcorn on a cookie sheet. Bake in 300 F oven for 15 minutes. Allow to cool and serve.

Sue Bee® Honey Caramel Apples


Ingredients

  • 1 cup Sue Bee® Honey
  • 1 cup heavy cream
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 4 large- or 6 medium-sized red apples, chilled
  • 4-6 bamboo skewers

Directions

  • Insert skewers into apple stems. Place in refrigerator to chill.
  • In a heavy saucepan over medium-high heat, combine Sue Bee® honey, heavy cream and salt and stir occasionally until boiling.
  • Reduce heat and carefully continue stirring until mixture reaches 260 F on a candy thermometer up to 30 minutes.
  • Remove honey caramel mixture from heat and stir in vanilla. Set aside for 5 minutes to cool and thicken, stirring occasionally. If caramel becomes too thick, return mixture to medium heat and stir.
  • Wipe the apples dry and dip them into the caramel one by one by holding the skewer, tilting and rolling until the apple is completely covered. Set apples on a baking sheet covered with parchment paper to cool.
  • Refrigerate for up to 20 minutes before serving.

Honey-Glazed Chicken Wings


Ingredients

  • 2 cups Sue Bee® Honey
  • 6 pounds chicken wings
  • salt and pepper
  • 1 cup soy sauce
  • 4 tablespoons vegetable oil
  • 4 tablespoons ketchup
  • 6 garlic cloves, minced
  • 1/4 teaspoon cayenne pepper, optional

Directions

  • Preheat oven to 375 F.
  • Combine remaining ingredients in medium bowl. Mix well.
  • Place wings in dish, pour sauce over and bake until chicken is well done and sauce is caramelized, about 1 hour.

Sue Bee® Honey-Mustard Chicken Wings

Ingredients

  • 1/2 cup Sue Bee® honey
  • 1/2 cup mustard
  • 1/4 cup butter, cubed
  • 2 tablespoons lemon juice
  • 1/4 teaspoon ground turmeric
  • 4 pounds chicken wings

Directions

  • In a small saucepan, combine Sue Bee® honey, mustard, butter, lemon juice and turmeric; bring to a boil.
  • Line two large baking pans with foil and coat with cooking spray; place wings in pans.
  • Pour the honey-mustard sauce over the chicken wings; turn to coat.
  • Bake at 400 F for 30 minutes; remove from oven and turn wings.
  • Bake for an addition 30-45 minutes or until chicken juices run clear and glaze is set.

Sue Bee® Honey Baklava


Ingredients

  • 1 1/2 cups (divided) Sue Bee® Honey
  • 1 cup melted butter
  • 2 1/2 cups chopped walnuts
  • 2 1/2 cups of chopped tart apple (Granny Smith, Jonathan or Jonagold)
  • 20 sheets of phyllo dough (14"" x 9"")
  • 1 1/2 teaspoon ground cinnamon

Directions

  • 1. Brush a 13"" x 9"" baking pan with butter. Carefully unroll phyllo dough sheets and trim to fit the pan, then set aside.
  • 2. In a large bowl combine the chopped walnuts, apple, 1 cup Sue Bee® honey and cinnamon. Mix until all ingredients are well-coated with honey. Set mixture aside.
  • 3. Into the pan layer 5 phyllo dough sheets, brushing each sheet with butter. Top dough with 1/3 of the walnut/apple mixture. Repeat until you have 4 layers of phyllo dough sheets alternating with 3 layers of walnut/apple mixture.
  • 4. Using a sharp knife, cut the baklava into squares or the traditional 1 1/2-inch diamond shapes. Bake at 350 F for 30 to 35 minutes or until golden brown.
  • 5. While the baklava is baking, heat the remaining 1/2 cup Sue Bee® honey in a small pan until thinned. After baking, pour the honey over the warm baklava.
  • 6. Place the pan of baklava on a wire rack to cool completely. When it is cool, cover and let sit overnight before serving.

Sue Bee® Honey Heavenly Bundt Cake


Ingredients

Bundt Cake

  • 1 1/2 cups Sue Bee® Honey
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 4 eggs, separated
  • 3 cups + 2 tablespoons sifted cake flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla flavoring
  • 1/4 teaspoon salt
  • 1 cup sour cream

Directions

  • 1. Heat the oven to 325 F. Cream the butter and sugar. Blend in egg yolks, one at a time, and beat until batter is fluffy. Stir in Sue Bee® honey and vanilla flavoring.
  • 2. Sift cake flour with other dry ingredients, add to egg yolk mixture and gently blend. Add sour cream and blend.
  • 3. Beat separated egg whites until stiff, then gently fold into the batter.
  • 4. Pour into Bundt or tube pan that has Bee®n coated with cooking spray and dusted with flour. Bake at 325 F for 50 to 55 minutes or until cake tester placed in center of cake comes out clean. Do not over-bake. Cool on a wire rack.

Honey Glaze

  • 2/3 cup (warmed) Sue Bee® honey
  • 1/4 cup light brown sugar
  • 1/3 cup melted butter
  • 1 teaspoon pure vanilla (or other flavor if desired)

Directions

  • 1. Combine Honey Glaze ingredients and pour over cake.

Sue Bee® Honey Grilled Chicken

Ingredients

  • 1/3 cup Sue Bee® Honey
  • 2 tablespoons butter or margarine
  • 1 clove garlic, chopped
  • 1 tablespoon lemon juice
  • 2 pounds chicken (breasts, legs, thighs or wings)

  • Heat grill to medium heat.
  • Melt butter in a skillet over medium heat, stir in chopped garlic and cook until fragrant, 1-2 minutes.
  • Whisk in honey and lemon juice.
  • Brush half the mixture on chicken, reserving half for basting.
  • Lightly oil the grill grate and place chicken on the grill.
  • Cook for 12-16 minutes, turning frequently.
  • Baste often during the last 5 minutes.
  • Chicken is done when the meat is firm and juices run clear.

Irish Soda Bread

Ingredients

  • 1/4 cup Aunt Sue’s® Organic Raw & Unfiltered honey
  • 2 1/2 to 3 cups all-purpose flour
  • 1 tsp baking soda
  • 3/4 cup buttermilk
  • 1 egg
  • 1/2 tsp cinnamon
  • 1/3 cup margarine or shortening
  • 1/2 cup raisins

Directions

  • Mix together flour, cinnamon and baking soda in large bowl; cut in margarine until mixture resembles coarse crumbs.
  • Stir in raisins.
  • Add buttermilk, egg and Aunt Sue’s® Organic Raw & Unfiltered honey to flour mixture; stir to make soft dough.
  • Turn out onto lightly floured surface to knead 1 to 2 minutes, or until smooth.
  • If dough seems too dry, add a little more buttermilk.
  • If it seems too sticky, add a little more flour.
  • Shape into flattened round ball and place on greased cookie sheet.
  • Brush top with additional milk and cut an “X” in the top with a sharp knife.
  • Bake at 375 F for 40 minutes or until golden brown and crusty.

Microwave Honey Peanut Brittle

Ingredients

  • 1/4 cup SUE BEE® honey
  • 1/4 cup light corn syrup
  • 1 cup sugar
  • 1/8 teaspoon salt
  • 1 cup peanuts
  • 1 tsp butter or margarine
  • 1 tsp vanilla
  • 1 tsp baking soda

Directions

  • Stir SUE BEE® honey, corn syrup, sugar, salt and peanuts into a 2-quart microwavable dish.
  • Microwave 7 minutes, stirring well after 4 minutes.
  • After 7 minutes, add butter or margarine and vanilla, blending well.
  • Cook 1 minute more.
  • Add soda and gently stir until light and foamy.
  • Pour onto cookie sheet that has been sprayed with nonstick vegetable coating.
  • Let cool 30 to 60 minutes.
  • Store in an airtight container to keep peanut brittle from drawing moisture.
