Sue Bee® Nutty Cookies

 

Ingredients

  • 1/3 cup Sue Bee® honey
  • 1/3 cup margarine
  • 1/4 cup pecans
  • 1 tbsp flax seed
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup whole wheat flour
  • 1 1/4 cups all-purpose flour
  • 1 tsp brandy extract
  • 1 egg
  • 2 tbsp milk
  • 250 ml black beans
  • 3/4 cup brown sugar
  • 1 cup raisins

Directions

  • Process black beans with the milk in a food processor until well pureed.
  • Set aside.
  • In a mixing bowl, cream margarine and brown sugar.
  • Stir in Sue Bee® honey, bean puree, egg and brandy extract.
  • In a separate bowl, combine all purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, allspice, nutmeg and ground flaxseed.
  • Add to margarine mixture and stir until well mixed. Stir in chopped pecans and raisins.
  • Drop by heaping teaspoonfuls onto cookies sheet. Flatten slightly with a fork dipped in water.
  • Bake at 350 F for 12 to 14 minutes.
