Honey-Roasted Pumpkin and Garlic
Honey, pumpkin and garlic are a great flavor combination and wonderful side dish great with any roasted meat.
1 tbsp olive oil
1 tbsp Aunt Sue’s® Raw & Unfiltered Honey
3 cups pumpkin, cut in large pieces
2 bulbs of garlic
Fresh ground pepper
Sprig of fresh thyme
Preheat oven to 375° F.
Mix honey and oil.
Cut top off whole garlic bulbs
Pour oil and honey over pumpkin and garlic and toss well.
Place on baking stone or cookie sheet and season with salt, pepper and thyme.
Cover loosely with a piece of foil and roast for 40 minutes.
Remove foil and bake for a further 20 minutes, or until pumpkin is golden.
