Honey Caramelized Red Onion

4 red onions, julienned

3 tbsp butter

¼ cup Aunt Sue’s honey

¼ cup white wine, champagne, or cider vinegar

¼ cup dry white wine

Honey Sriracha Mayo

½ cup prepared mayo

2 tbsp sriracha

2 tbsp Aunt Sue’s honey

Salt and pepper to taste

In a medium bowl, whisk all ingredients to combine.

Honey Caramelized Red Onion

Melt butter in a pan over medium low heat, then add onions.

Cook onions till they begin to soften and caramelize, stirring often for about ten minutes.

Add honey, vinegar, and wine. Reduce to a syrupy consistency, approximately ten minutes.

Use on grilled cheese, cold sandwiches, grilled chicken or steaks, or your next cheese plate.

Spread honey sriracha mayo on bread.

Place Brie slices on bread, making sure they are spread evenly.

Top with a layer of avocado,  jalapeños, and honey caramelized red onions.

Finish by topping with a layer of shredded Gouda and another slice of bread with mayo.

In a non stick or cast iron pan, melt half the butter over medium heat.

Cook the sandwich or one side, rotating occasionally to ensure even heat, till brown and crispy and cheese is beginning to melt.

Melt remaining butter and cook the other side.

Cut in half and serve
